RECIPE CORNER

Desserts can be problematic for many reasons–my histamine intolerance, my food allergies, my blood sugar, all of the above…so, one dessert that I can indulge in now and then is Baked Apples. They’re easy to make, tasty, and not terribly packed with sugars. I’d love to be able to add cinnamon to these, but that’s a no-no with histamine intolerance.

Baked Apples

BAKED APPLES

Preheat oven to 350°

4 medium-large apples (I like Fuji or Jonagolds. I don’t recommend Delicious apples at all).
1/3 cup gluten free oats
3 tbsp white rice flour
4 tbsp butter/margarine/spread (I use a coconut oil spread)
2 tbsp packed brown sugar
2 tbsp water

In a bowl, mix together the oats, rice flour, brown sugar, and add the margarine and water till it becomes a crumbly mixture. If you like, you can add cinnamon and cloves.

Core the apples but do not peel. Set wide side down in pan that you’ve greased or coated with cooking spray, so the apples are not touching. Divide the crumbly mixture evenly between the four apples, packing into the center hole.

Bake for one hour, until done. Serve warm or cold.
Makes four servings.
