dairy free chocolate nut clusters in pretty foil cups

Not only are these nut clusters dairy free, they are relatively low carb in limited amounts. I wanted a dairy-free candy that wasn’t too high carb, that had the TASTE of candy but yet that offered some protein with it, and that satisfied after a few bites. So I created these.

Chocolate-Peppermint Nut Clusters (Dairy Free)

1 – 10 oz bag Equal Exchange Organic Bittersweet Chocolate Chips (These are, as of currently, produced in a facility that does NOT process peanuts, tree nuts, milk, eggs, wheat and soy)
1.5 cups walnut pieces
2 cups pecan pieces
1/2 cup canned, unsweetened coconut milk
1 teaspoon peppermint extract

In large microwave proof bowl, mix chocolate chips and coconut milk. Microwave for 2 minutes, stirring at 1 minute. Remove and whisk smooth. Whisk in peppermint extract. The mixture will be glossy smooth. Stir in nuts and coat well.

Line mini-muffin pans with foil muffin liners. Spoon nut mixture into cups. Chill in refrigerator until hardened up.

Makes 36 candies at 3.5 net carbs each. (Note: using other chocolate chips may increase the carb count, these chips are not only dairy free but relatively lower in carbs).

    Very nice! As Elaine says: use a double boiler…you do not want to melt over direct heat b/c it will burn…

    OK, I don’t have Microwave, what is the best way to melt chocolate chips and coconut milk?

      This sounds delicious and really easy! I’ll have to try it.You could boil water in a pan & use a smaller pan over the water with the chocolate chips & coconut in the smaller pan. It’s a homemade double boiler.
