So last night I made hot cocoa for a friend and I while we watched the mini-series of the Shining (which we BOTH like FAR better than the movie–I hated the movie version. The mini-series is really so much better IMO…Stephen King had a direct hand in producing it).

Anyway, it called for some autumn tasty delights…so I made some low-carb dairy free hot chocolate with a kick.

Hot Chocolate w/Espresso Vodka

2 cups coconut milk
1/4 cup dark cocoa powder (unsweetened)
1/3 cup sugar free caramel coffee syrup
1 tsp vanilla extract10 drops Stevia (liquid)
3 shots Veil Double Espresso Vodka

First, blend everything but vodka together. Pour into saucepan and heat over medium heat, whisking constantly, till hot. Remove from heat, whisk in vodka. Pour into mugs.

Serves 2 (you can eliminate the vodka if you don’t drink)

This makes a VERY rich drink. You could add a cup of rice or almond milk to thin it out a little and it would serve three, then.

    I would have to leave out the alcohol, but it sounds great! I’m ready for hot chocolate and tea this time of year. I had chai yesterday as my wake-up drink.
