I’ve come up with a couple summer coolers that work for low carb, and that taste fruity and light.
Iced Herbal Tea Drink
3 cups strong raspberry tea (herbal, caffeine-free)
2 bottles San Pelligrino or Perrier or 2 liters of Talking Rain water
1/3 cup raspberry or black cherry sugar free coffee syrup
1/3 cup lemon sugar free coffee syrup
1 tbsp lemon extract
Stir everything together in a large pitcher and chill. Serve iced.
Raspberry Low Carb Dairy-Free Shake
1 10-0z package unsweetened frozen raspberries
1 can unsweetened coconut milk
1 cup So Delicious unsweetened coconut milk drink, or 1 cup unsweetened almond or soy milk
1/2 tsp liquid stevia
1 tbsp cherry or raspberry extract
4 ice cubes
Blend (a Nutribullet mixer works wonders with this, but a blender that can crush ice works too) until all ingredients are liquefied. Serves two.

A lot of people have wanted me to. Trouble is, cookbooks take forever to write–because you have to test and re-test every recipe. 🙂
